When tasked with satisfying the sweet tooth of your special guest - and in my case, one of my favorite Las Vegas entertainers - there's no room for compromise. We're talking about a classic fudgy chocolate brownie, bursting with cherries and kissed with a subtle twist of ruby chocolate - it's a recipe that's as unique as today's special guest.
Each bite of these ultra-decadent, ultra rich-brownies is a journey through layers of velvety chocolate, juicy bursts of sweet red cherries and a hint of ruby chocolate magic that elevates these brownies to a new delicious and sophisticated level.
They're easy to make, a total crowd pleaser, and they're pretty cute too - if I do say so myself. 😉

RECIPE:
Cherry Chocolate Ruby Brownies
INGREDIENTS:
1/2 cup unsalted butter
1 cup sugar
2.5 tbsp unsweetened cocoa powder
2 large eggs
1/4 tsp salt
1 tsp vanilla extract
1/2 tsp cherry emulsion
1/3 cup all-purpose flour
1/3 cup ruby cocoa
1/2 cup chopped sweet frozen cherries
Method
Preheat your oven to 350. Lightly grease and line an 8x8 inch square pan with parchment paper over hanging the edge so you can easily lift the brownies out of the pan once they've cooled.
Melt your butter and chocolate together and add to a large bowl with the sugar and cocoa. Whisk until blended.
Whisk eggs in one at a time.
Add salt and extracts, mix in and then fold in your flour and ruby chocolate chips.
Pour batter into your pan and gently spread into an even layer. Add cherries on the top.
Bake for 33-37 minutes until a toothpick comes out with only a few moist crumbs.
Once brownies are cooled, drizzle with melted white and ruby chocolate.
